An Easy Apple Pie Cookies Recipe to Celebrate National Apple Pie Day

Since it’s national apple pie day, I decided to try making this apple pie cookies recipe. Honestly, these cookies are really delicious on their own. They are very easy to make and they are so moist and chewy. The chunks of apple add a burst of flavor along with the cinnamon and nutmeg. Although I do love these cookies alone, they aren’t the most picturesque. They are just rather boring looking, so that’s why I decided to make apple pie ice cream sandwiches.

Nothing says patriotic holidays quite like apple pie, so that’s why I decided to add red white, and blue sprinkles to the ice cream sandwiches. It’s the perfect dessert to serve for Memorial Day or the 4th of July!

Making ice cream sandwiches is actually so simple. Underbake your cookies just slightly so they are soft and chewy – not crunchy. If your recipe is for crunchy cookies, I’d choose one that’s chewier. Then once they are cooled, stick them in the freezer before you start to assemble them. I chose vanilla ice cream and patriotic sprinkles, but you don’t have to use sprinkles or you could also use chocolate chips or m&ms. It’s that simple and these apple pie ice cream sandwiches are a total crowd pleaser!

EASY APPLE PIE COOKIES

Stacey shares an easy and delicious recipe for apple pie cookies recipe. She also turns them into apple pie a la mode ice cream sandwiches.
Servings 4

Ingredients
  

  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup green apple peeled, and grated, or finely chopped.
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp sea salt
  • 2 tsp baking powder
  • 3 tbsp sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Instructions
 

  • Preheat oven to 350. Cover a baking sheet with parchment paper.
  • With a hand mixer cream the sugar and butter together for about 2 minutes.
  • Stir in the prepared egg, vanilla, and prepared apple.
  • In a separate bowl sift together the flour, salt, and baking powder.
  • Combine the dry mixture with the wet mixture and just blend.
  • Scoop into heaping tablespoons full and roll into balls.
  • In a separate bowl, combine the sugar, cinnamon, nutmeg, and ginger in a small bowl.
  • Roll each ball in the sugar/cinnamon mixture.
  • Place on the parchment-covered baking sheet about 2" apart. Bake at 350 degrees 12-15 minutes.
  • Do not over-bake. You want them to be a little under for making ice cream sandwiches.
  • They will be a little soft when they are removed from the oven but they will harden. Remove to a rack to cool. The photo makes them look larger than they are in reality. They are about 2" in diameter.

To Make Ice Cream Sandwiches

  • 1/2 gallon of vanilla bean ice cream sprinkles of your choosing (I bought these and these)
    Freeze the apple pie cookies. Once frozen, then add a scoop of ice cream and press down to flatten. If you want to add sprinkles or other toppings, you can roll the sandwiches into the sprinkles. You could also use mini chocolate chips or mini m&ms. 

Apple Pie Cookies Recipe

Ingredients:

½ cup butter

1 1/4 cup all-purpose flour
½ teaspoon sea salt
2 teaspoons baking powder
3 tablespoons sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
