Since it's national apple pie day, I decided to try making this apple pie cookies recipe. Honestly, these cookies are really delicious on their own. They are very easy to make and they are so moist and chewy. The chunks of apple add a burst of flavor along with the cinnamon and nutmeg. Although I do love these cookies alone, they aren't the most picturesque. They are just rather boring looking, so that's why I decided to make apple pie ice cream sandwiches. Nothing says patriotic holidays quite like apple pie, so that's why I decided to add red white, and blue sprinkles to the ice cream sandwiches. It's the perfect dessert to serve for Memorial Day or the 4th of July! Making ice cream sandwiches is actually so simple. Underbake your cookies just slightly so they are soft and chewy - not crunchy. If your recipe is for crunchy cookies, I'd choose one that's chewier. Then once they are cooled, stick them in the freezer before you start to assemble them. I chose vanilla ice cream and patriotic sprinkles, but you don't have to use sprinkles or you could also use chocolate chips or m&ms.
