How to Make Avocado Pumpkin Spice Cake Recipe

I’m back with another pumpkin spice recipe! I just can’t help myself. It is my favorite time (and flavor) of the year. I’m extra excited about this avocado pumpkin spice cake recipe because – duh – it has fresh avocados!

Why would I want to put avocados in my cake, you ask? Well, did you know that avocados are a good source of fiber and contain healthy fats? This pumpkin spice cake recipe is so delicious! I decided to make them in mini bundt pans because I love the way the outside gets crispy and the inside stays nice and moist. Plus, this is a recipe you can feel really good about serving, even for breakfast! There is very little added sugar, and mostly you’re eating eggs, avocado, and pumpkin!

I just learned from a recent study* of a randomized clinical trial conducted on 31 relatively healthy overweight or obese adults, 25-60 years of age, who consumed three meals in random order that people who ate a whole avocado for breakfast were less hungry and more satisfied after their meal than people who ate a low fat, control meal of the equal calories.

That’s just another reason why I love this recipe. It seriously does make a great breakfast too! Though more research is needed to generalize the results to all people, the findings support the growing body of evidence connecting eating avocados and a positive impact on body weight and type 2 diabetes prevention.

I’m really lucky that no one in my immediate family has diabetes, but I do know a lot of people who do suffer from type 2 diabetes.
