Have you tried making frittatas before? If not, you need to start. The great thing about frittatas is they work for breakfast, lunch or dinner. You can pair them with a salad, they work great for lunch. If you add a side of roasted veggies, frittatas make a great dinner. Of course, they always work for breakfast as well. Moreover, they provide a family-friendly, healthy and filling meal in with very little effort.
This ham and cheese frittata recipe is great because you can use things you probably have in your house to whip up a yummy family meal for any time. I used Castle Wood Reserve® smoked Virginia ham and sharp cheddar cheese as the main ingredients in my frittata. Also, I added in onions and peppers for a frittata version of a Denver or Western omelet.
If you haven’t thought about using deli meats and cheeses in dishes beyond the standard sandwich, you should! It’s time to think beyond the sandwich. Deli meats and cheeses, like Castle Wood Reserve® that you can find at Walmart, provide a tasty source of protein that is versatile and can be used for breakfast or dinner. Castle Wood Reserve® offers premium meats and cheeses that are versatile enough for a charcuterie board or lunch box, but the unmatched flavor will have you eating them on their own. Their premium products are of the highest quality and offer a great value as well.
This ham and cheese frittata recipe turned out even better than I hoped. Immediately after it cooled, my husband scarfed down two pieces. After the first bite, I heard ‘”mmmmm” coming from the dining room. I peeked my head in and I saw his eyes had gotten really wide as he whispered, “this is so good.” If his reaction is any indication, I think this ham and cheese frittata recipe is a winner for my whole family. I actually plan to serve the rest for dinner tonight.
Ham and Cheese Frittata Recipe
Ingredients:
8 large eggs
1/2 cup of milk
4 slices of Castle Wood Reserve® Natural Sharp Cheddar Cheese
1/4 package of Castle Wood Reserve® Smoked Virginia Ham
1 green bell pepper
1 red bell pepper
1 sweet onion
olive oil
salt and pepper, to taste
chives for garnish
Directions:
Preheat oven to 375. Chop onions and bell peppers, saving half of the red pepper to make 4-5 rings for garnish. Chop the cheese and meat into bite-sized pieces.
Turn the burner on medium to heat up your cast iron skillet. Add olive oil once the pan is warm and add the onions and peppers to the pan. Sautee the vegetables until they are translucent and have released their water. Add the ham and cook until starting to brown. Season your ham and vegetables with salt and pepper, to taste. While the vegetables are cooking, beat the 8 eggs and milk until well incorporated. Add a pinch of salt and pepper to the eggs and milk mixture.
Use a bit more olive oil to the pan to ensure it is well coated on the bottom so the eggs don’t stick. Add the eggs to the skillet. Using a spatula, make sure the vegetables and ham mixture is evenly dispersed in the egg mixture. Once the eggs begin to set slightly, add the cheese to the top of the eggs. The cheese should sink in and will melt as the eggs cook. Once the sides of the eggs begin to set, transfer the skillet to the oven. After 10 minutes, add the pepper rings to the top of the egg mixture for decoration and extra flavor. Cook the frittata until the egg and cheese begin to brown on top, about 30-40 minutes.
Once browned, remove from the oven and let cool for 10-15 minutes before cutting. Serve warm or at room temperature.
