Why These Simple Oatmeal Lace Cookies Are So Addictive
Did you know today is National Lacy Oatmeal Cookie Day? Yeah, I didn’t know it was a thing either until a couple of days ago. I hadn’t even heard of lacy oatmeal cookies before. I’ve made Florentine lace cookies before, but never oatmeal lace cookies. I love trying new recipes, so I decided to give these a shot. OMG, if you like caramel and oats, you’re going to love this recipe. These cookies are so delicious, they are seriously addictive.
When I let my kids try these cookies, they actually thought they were caramel. But that’s what happens when you combine butter and brown sugar. It creates this amazing caramel-like cookie! These cookies are actually super easy to make. The one major tip I think I should share is that you will want to be sure to allow ample room for these cookies to spread. I only put 6 cookies on each cookie tray at a time. The cooking time is quick, so you also need to make sure to watch them. They need to be golden brown but you also don’t want them to burn. If they are too light they won’t stiffen up, if they are too dark, you’ve overcooked them. It takes a few tries to get the perfect cookie, but I’m telling you, it’s worth the extra time!

Oatmeal Lace Cookies
Stacey shares a recipe for oatmeal lace cookies. It is National Lacy Oatmeal Cookie Day on March 18, so she shares a really yummy recipe.
Ingredients
- 1 cup butter
- 2 1/4 cups light brown sugar packed
- 2 1/4 cups rolled oats
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 large egg lightly beaten
Instructions
- Preheat oven to 375º F. Line baking sheets with parchment paper.
- In a bowl, combine oats, flour, salt, egg, and vanilla. Set aside.
- Heat butter and brown sugar in a saucepan over medium heat, stirring frequently until the butter has melted and the mixture is smooth. Add the butter/sugar mixture to the bowl of oats and mix until combined.
- Drop cookie batter by the teaspoon onto prepared baking sheets and flatten to a disk. Make sure to leave at least 2 inches between each cookie to allow them to spread.
- Bake for 7-8 minutes, watching closely to prevent them from over-baking. The oatmeal lace cookies should be golden brown.
- Allow to cool on the cookie sheet for 2-3 minutes and remove onto racks to cool completely.
Notes
I actually found sticking the cookies in the freezer for a couple of minutes was the quickest way to get them to cool so they stayed intact when I moved them to the cooling rack. If your cookies are too flimsy to hold together, then you need to bake them a bit longer. Enjoy!
