I also attended a major university with a big-time Division I football program, the same one as my hubby (only decades earlier 😜) who also played football. You won’t catch much else on our TV in the fall and winter. Given how much we like football, I regularly search for yummy dishes I can serve that are quick, easy and delicious. This baked ricotta cheese dip checks all of my boxes.

Well, I know it might sound strange, but this baked ricotta cheese dip is totally delicious, super easy to make, and is even a healthy alternative to your standard spinach and artichoke dip.

You won’t have to miss a minute of the game, and you’ll have a hot appetizer that’s a total crowd-pleaser. Plus, it goes so well with things you should always have on-hand for game day, like crackers and Coca-Cola. I served mine with TRISCUIT crackers and Wheat Thins from my local Kroger store for a great crunch. You could also serve this hot ricotta cheese dip with fresh veggies like carrots and celery.

32-ounce container of ricotta cheese
1/4 cup chopped fresh flat-leaf parsley
2 teaspoons fresh thyme leaves
2 tablespoons chopped fresh oregano leaves
1/4  teaspoon crushed red pepper
1/2 cup grated Parmesan cheese
kosher salt and black pepper, to taste
TRISCUIT crackers and Wheat Thins
