A few weeks ago, I shared this nuts and seeds cookies recipe. I still had a lot of extra sunflower and sesame seeds leftover from that recipe, so I created this healthy oatmeal breakfast cookies recipe. Both recipes are similar in that they are crunchy and nutty. But they are quite different because this recipe calls for oatmeal and chocolate chips. Both cookie recipes are definitely on the healthier side. They both make great snack options or even breakfast options for your kids or yourself. Whenever possible, I try to limit refined and packaged foods for my family and for myself. That's why I love these cookies as an alternative to some of the sweeter breakfast items available. I also love this recipe for healthy oatmeal breakfast cookies because they are super easy to make and they are so tasty! My kids ate them right up and I felt like I was making a much better choice for them than with commercial baked goods you find at the grocery store. Healthy Oatmeal Breakfast Cookies Ingredients: 1 1\/2 Cups Rolled Oats 1\/4 Cup Almond Flour 1\/2 Cup Sunflower Seeds 1\/4 Cup Sesame Seeds 1\/4 Cup Shredded Coconut 1\/2 Cup Chocolate Chips 1\/3 Cup Peanut Butter 1\/2 Cup Maple Syrup 1 Egg Directions: Preheat the oven to 350 degrees F and line a baking pan with parchment paper. Mix all the dry ingredients together in a bowl. Mix all the wet ingredients together in a separate bowl. Pour the dry ingredients into the wet and mix together until well combined. Use a cookie scoop to scoop evenly sized cookies onto the baking sheet. Press down with your hands (these cookies won\u2019t spread). Bake for 12 to 14 minutes. Note: If you don't have sesame seeds on hand, you could replace that with another nut or add raisins or dried fruit. If you want them healthier, you could also remove the chocolate chips and replace with dried fruit.
