Stuffed Shells with Ground Beef and Mushrooms Recipe

Ingredients

1/2 pound of ground beef
8 oz button mushrooms, finely chopped
half a box of jumbo shells (18-22 shells)
1 cup whole milk ricotta
1 large egg
1.5 cups shredded mozzarella
15 ounces tomato sauce
2-3 garlic cloves
2 teaspoons oregano
salt and pepper, to taste

Directions:

Preheat the oven to 350. Bring a large pot of water to a boil. Cook the shells until they are al dente, 9-10 minutes. Drain the shells and set them aside.

While the shells are cooking, add the ground beef to a large nonstick skillet set over medium heat and cook until browned. Add the mushrooms and saute until all of the water releases. Drain any excess fat/oil and transfer the meat and mushroom to a separate bowl and allow the meat to cool until room temperature.

Once the meat and mushroom mixture is cool, stir in the ricotta cheese, egg, oregano, and salt and pepper. Mix until well combined. Add half the jar of tomato sauce to the bottom of a 9×13 pan. Fill each of the shells with a teaspoon of filling and place filling-side-up in the 9×13 pan. Continue filling the shells until all the meat and mushroom filling is gone. Top the shells with the remaining tomato sauce and all of the grated mozzarella cheese.

Bake the shells until the cheese is melted and starting to brown, approximately 25 minutes. Serve immediately.
