Well, these are so easy to make and taste so much better than your standard mashed potatoes. To make these garlic smashed potatoes, you only need 3-4 ingredients, a pan, a potato masher (or the bottom of a cup) and the oven. First, you'll need to cook your potatoes. We did ours in the microwave. I just cleaned them, poked some holes in them with a fork and microwaved for about 15 minutes, until they were tender. Once they were out of the microwave, I used a potato masher to smash them flat. To make the garlic-butter topping, you just need to melt the butter in the microwave, chop up the garlic and parsley, and mix them together. I also added some olive oil, but you could just use all butter if you like. Next, simply drizzle the butter topping evenly on the potatoes. Bake them for 15-20 minutes, until they turn golden brown on top. Take them out of the oven and enjoy immediately. They really are a perfect side dish to serve this holiday season.
