It's watermelon season and we are here for it! We love watermelon and had so much extra on hand. That's why I decided to make these easy homemade watermelon popsicles. It is such a simple recipe and the best part is that it only uses real ingredients and no artificial flavors. To make these watermelon popsicles, all you need is three ingredients and popsicle molds. I used these. The three ingredients you need are watermelon, kiwi, and lemonade. If you don't want to use store-bought lemonade, you could make your own. This lemonade recipe has tons of positive reviews. Once you have all of our ingredients, start by pureeing 2 cups of watermelon. You can add a bit of sugar if you want it sweeter (I opted not to, but a lot of versions of this recipe did add sugar). Pour watermelon into the molds until they are 3/4 full. Add sticks and freeze for 3 hours. Next, add a thin layer of lemonade to the molds and freeze again for an hour or so. Finally, peel the kiwi fruit and puree. I used 4 kiwi, but it depends on size. I did add a splash of lemonade to the kiwi to help puree it a bit more. Then, I strained the kiwi to remove the seeds. You can leave the seeds, if you don't mind them. Pour the kiwi puree into the molds until they are full and freeze again for several hours. If you want the kiwi sweeter, you can add sugar to taste. That's it! How to Make Easy Watermelon Popsicles Ingredients and tools: 2 cups watermelon, rind removed and chopped 4-6 kiwi fruit, peeled and chopped lemonade (I used store bought) sugar, for added sweetness (optional) popsicle molds and sticks Directions: Puree the watermelon and add 3/4 way full into popsicle molds. Add sticks and freeze for 3+ hours. Add a thin layer of lemonade to each mold and freeze again for an hour. Puree the kiwi fruit, strain the seeds, and add the puree to fill the molds. Freeze for several more hours. Note: you can add chocolate chips to the watermelon step if you want the look of seeds. You can also add sugar if you want the bars to be sweeter.
