One of my favorite ways to use extra summer fruit is to make easy galette recipes. Unlike baking fresh pies, galettes are much easier and feel much less fussy than pies. Also, I love this easy cherry galette recipe using fresh cherries because the whole thing takes less than an hour to make, including baking time, and it's such a great dish to serve at a casual family gathering. I use this same cherry galette recipe as the basis to make other types of galettes, including berry galettes, or peach or other stone fruit galettes. I even used the same dough to make a savory summer vegetable galette. This recipe works great with most fruits and with veggies too. This crust also is my go-to for pies, as well. How to Make This Cherry Galette Recipe For the crust: Follow this recipe For the filling: 3 cups pitted and halved cherries 3 Tbsp granulated sugar 1 Tbsp fresh lemon juice 1 Tbsp corn starch Make the cherry galette dough and chill in the fridge. As the dough is chilling, mix the cherries, sugar, cornstarch, and lemon juice together in a large bowl. Preheat oven to 375°F. Line a large baking sheet with parchment paper. On a lightly floured work surface, roll the dough into a 12-inch circle. Transfer dough to the prepared baking sheet. Spoon the cherries into the center of the dough, leaving a 2-3 inch border all around. Gently fold the edges of the dough over the fruit, overlapping the dough as you go around. Press gently to seal the edges. Brush the edges with egg wash. Bake until the filling is bubbly and the crust is golden brown, about 25-30 minutes. Allow to cool to room temperature before serving (this will ensure your juices meld into the crust and don't leak everywhere!). Serve with ice cream, powdered sugar or whipped cream, if desired.
