I'm from Green Bay, Wisconsin, so let's just say I'm very familiar with football and cheese. I figured out that this Baked Brie with Fig Jam recipe is a great way to enjoy both! Here's the story. My family was in town last week for the holidays, and I thought I’d put together a little party to watch our school play in their college football bowl game. My sister, husband, and I all attended the same college in Wisconsin, so it was a fun way for us to spend some time together. My friend Amy made this awesome baked brie appetizer a few years back. Not only was it really delicious, it was just so fancy.I decided to make the baked brie with fig jam appetizer the star of my party table and then added a few other appetizers I knew my family would enjoy. A party isn't a Wisconsin football party unless it has some sharp cheddar cheese, summer sausage, and Ritz crackers on the table. Throw in a couple bowls of mixed nuts, the obligatory veggie tray to balance out the snacks, and plenty of ice cold Coke for a little refreshing sweetness.This baked brie with fig jam appetizer is actually super easy to make and you can find all the ingredients at your local grocery store. If you can’t find or don’t like fig jam, you could definitely substitute another fruit spread. If you don’t like the sweet/savory mix of the brie and jam, you could also substitute another spread, like pesto or red pepper spread instead of the fig jam for a savory take on this appetizer.To decorate the table, I visited my local party store and found some mini footballs and a megaphone in my team’s color. I served the Coke on a serving tray with a bowl of ice and some standard red party cups. The appetizers were served on plates I’ve collected over the years. My tip for serving is to try to stay within a single color palette, if possible. I tend to stick to white plates as much as possible because it always looks clean and chic.The baked brie with fig jam appetizer was a huge hit. Baked Brie with Fig Jam Appetizer Ingredients: 8 oz Brie cheese (rind on) ½ cup fig jam (or other fruit spread) 2 sheets of puff pastry, thawed 1 egg 1 tablespoon water Ritz Crackers Fresh Rosemary (optional) Directions: Preheat oven to 400 degrees. Lightly flour the work surface and unroll one sheet of puff pastry. Gently roll out the pastry to diminish the creases. Place ½ cup of fig jam in the center of the puff pastry and top with the brie round (rind on). Fold puff pastry over the brie in a circular motion. Once all puff pastry is covering the brie, create an egg wash by beating one egg with the one tablespoon of water. Brush the egg wash all over the puff pastry to help seal it. Turn the puff pastry over and brush the top of the pastry. To create the mini football, roll out the second sheet of puff pastry. Using a knife, cut out a football shape, approximately 3 inches long by two inches wide. You can decorate the football by adding little pieces of puff pastry to the sides to create the white bands and then use the knife to create the laces. Attach the football to the center of the top of the puff pastry and egg wash the football. Bake for 20 -25 minutes, until golden brown. Serve warm on a platter surrounded by fresh rosemary and Ritz crackers and plenty of iced cold Coca-Cola. At my local store, I found the brie in the deli section, the puff pastry in the freezer section, the fig jam near the peanut butter and jelly, the Ritz crackers in the cracker section, and the Coke in the soda aisle.
