Baked Brie with Fig Jam Appetizer
Ingredients:
8 oz Brie cheese (rind on)
½ cup fig jam (or other fruit spread)
2 sheets of puff pastry, thawed
1 egg
1 tablespoon water
Ritz Crackers
Fresh Rosemary (optional)
Directions:
Preheat oven to 400 degrees. Lightly flour the work surface and unroll one sheet of puff pastry. Gently roll out the pastry to diminish the creases.
Place ½ cup of fig jam in the center of the puff pastry and top with the brie round (rind on). Fold puff pastry over the brie in a circular motion.
Once all puff pastry is covering the brie, create an egg wash by beating one egg with the one tablespoon of water. Brush the egg wash all over the puff pastry to help seal it. Turn the puff pastry over and brush the top of the pastry.
To create the mini football, roll out the second sheet of puff pastry. Using a knife, cut out a football shape, approximately 3 inches long by two inches wide. You can decorate the football by adding little pieces of puff pastry to the sides to create the white bands and then use the knife to create the laces.
Attach the football to the center of the top of the puff pastry and egg wash the football.
Bake for 20 -25 minutes, until golden brown.
Serve warm on a platter surrounded by fresh rosemary and Ritz crackers and plenty of iced cold Coca-Cola.
To create this recipe, simply head over to your local Safeway to pick up all the ingredients you’ll need! At my local store, I found the brie in the deli section, the puff pastry in the freezer section, the fig jam near the peanut butter and jelly, the Ritz crackers in the cracker section, and the Coke in the soda aisle.
