Five-Minute Peanut Butter Fudge

I’ve had these mini marshmallows in my pantry for at least 6 months. For some reason, anytime I have a bunch of random ingredients like that, I feel compelled to create something. Mostly, because it seems wasteful not to use them before they get all stale. I had some extra chocolate chips from the biscotti I made a couple weeks ago, I so I googled, recipes that included both chocolate chips and marshmallows, which is how I came up with this five-minute peanut butter fudge recipe.

I love this recipe because it is so ridiculously easy, and takes even less than five minutes to create. The most challenging part was cleaning the peanut butter out of the measuring cup!

This five-minute peanut butter fudge recipe is perfect for the holidays because it is indulgent and seems fancy, so you can bring it to parties or serve it to your guests and they’ll think you spent hours in the kitchen.

Given that most of us are so pressed for time during the holidays, this easy microwaveable recipe is a nice change from the cut-out cookies that take hours to prepare.

Even better than the time savings, is that this tastes good! The marshmallows add a lightness while the peanut butter and chocolate are still my favorite combination.

Five Minute Peanut Butter Fudge

Ingredients:

2 cup chocolate chips
1 cup peanut butter
2 cups marshmallows
3 teaspoons margarine

Directions:

  1. Line an 8-inch pan with foil and generously grease it with butter or cooking spray.
  2. Melt chocolate chips, peanut butter, and margarine for about 1 minute in the microwave.
  3. Add marshmallows and mix.
  4. Pour into a greased 8-inch pan and put in the fridge for about 2 hours. If you need this quick, put in the freezer for about 45 minutes.
  5. Cut into 1-inch squares and enjoy!

Tip: If you don’t like marshmallows, you could easily swap in nuts or dried fruit instead.
