Have you tried making homemade birthday cake ice cream? Well, if you don’t have an ice cream maker, you can still make it at home with this recipe. If you do have an ice cream maker, then you need to try this classic sweet cream ice cream that I turned into birthday cake ice cream! It is so yummy, and I know your entire family will love this recipe.

The base of this birthday cake ice cream recipe could be used for so many other flavors too! If you don’t love birthday cake, you could easily swap out the cake and sprinkles to create a fruity ice cream – like strawberries and cream, or you could add Oreos for cookies and cream! The ideas are endless with this sweet cream base I found on the NY Times. It’s really an amazing ice cream recipe that you need to try for yourself. If you do want to try homemade birthday cake ice cream, then you do need to try making it at home. I honestly think this is so much more delicious than any ice cream you’ll find in stores.

Homemade Birthday Cake Ice Cream

2 cups heavy cream
1 cup whole milk
⅔ cup sugar
⅛ teaspoon fine sea salt
6 large egg yolks
Slice of Birthday Cake (or white cake)

In a small pot, simmer heavy cream, milk, sugar, and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly add a third of the hot cream into the yolks. Then, whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).

Strain through a fine-mesh strainer into a bowl. Cool mixture to room temperature. Cover and chill for at least 4 hours or overnight. Churn in an ice cream machine according to manufacturers’ instructions. I used this one. Serve the homemade birthday cake ice cream directly from the machine for soft serve, or store in the freezer until needed.
