Garlic Smashed Potatoes
Ingredients:
6 Yukon Gold Potatoes
3 Cloves of Garlic
1/4 Cup of Parsley (loosely packed)
1/2 Cup of Butter
1/4 Cup of Olive Oil
Salt and Pepper, To Taste
Directions:
Preheat oven to 400. Clean potatoes, poke holes in them with a fork and microwave until tender, about 15 minutes. Once out of the microwave, place the potatoes on a baking sheet and flatten them with a masher or the bottom of a cup. Next, prepare the garlic butter. Melt the butter in the microwave.
