Salad


I’ve never eaten grilled apricots before. The idea for this grilled apricot salad recipe came about after a failed attempt to grill peaches (we couldn’t get the pits out!). Since apricots were also in season, we decided to give them a try and developed this salad using grilled apricots, watercress, feta, balsamic syrup, and pepitas.

For the longest time, I’ve wanted to make an appetizer recipe with endive. They seem like such a simple, yet elegant appetizer to serve at a party or get-together. Since the summer produce is so amazing right now, I decided to create little watermelon feta salad bites. They are super easy to make, taste so fresh, and are a unique take on a sweet/savory appetizer.

Are you a salad person? In the summer, I definitely prefer to eat salads for lunch over most other things. I normally prefer hot food, but in the summer, I love a cold salad with cold roasted veggies on it. This arugula beet salad is my current go-to. I roast up a large batch of beets on Sunday and then I can make healthy salads all week long.

Are you a zucchini fan? Have you ever had it in a salad? I think most people are used to eating it sauteed, in bread or muffin, or maybe deep-fried, but its really yummy in many different ways. One of my favorite ways to use zucchini is to make zucchini pizza crust. I also love these zucchini parmesan crisps and these zucchini chaffles.
