How to Make No-Knead Dutch Oven Bread


3 1/4 cups bread flour
1/2 tablespoon salt
1 pack quick rise yeast
1 1/2 cups warm water


2.75 quart Dutch oven with lid
Large mixing bowl
Measuring cups and spoons
Dough scraper or spatula
Clean tea towel


Step 1: Mix the Dough

In a large mixing bowl, combine the water, salt, and yeast. Once the yeast has evaporated and started to froth, add the flour and mix until the dough is combined. Cover the bowl with a clean tea towel and let it sit at room temperature for 2-3 hours. The dough should double in size and become bubbly and sticky.

Step 2: Shape the Dough

After the dough has risen, dust a clean work surface with flour and turn the dough out onto it. Use a dough scraper or spatula to divide the dough in half. Then, fold each of the dough halves over itself a few times until it forms a ball. Dust the ball with flour and place it on a sheet of parchment paper. Cut slits on the top of the ball in an X shape. 

Step 3: Preheat the Dutch Oven

While the dough is resting, preheat your Dutch oven in the oven at 450°F for 30 minutes. This will ensure that the pot is hot enough to create a crispy crust on the bread.

Step 4: Bake the Bread

When the Dutch oven is hot, carefully remove it from the oven and gently place the parchment paper with the dough ball in the center of the dutch oven.  Replace the lid and bake the bread for 20 minutes. After 20 minutes, remove the lid and bake for an additional 10-15 minutes, or until the crust is golden brown on top. Carefully remove the bread from the pot and let it cool on a wire rack for at least 30 minutes before slicing.

Tips and Tricks for Making Dutch Oven No Knead Bread

  • Use a kitchen scale to measure the flour for more consistent results.
  • If you don’t have parchment paper, you can also dust the ball with flour and place it directly in the Dutch oven. However, using parchment paper makes it easier to transfer the dough to the pot and prevents it from sticking.
  • You can experiment with different flours and add-ins. Some ideas include whole wheat flour, rye flour, or herbs, to create different flavors and textures.
  • For a more rustic, artisan look, use a sharp knife to make shallow cuts on the top of the dough before baking.
