How to Make These Yummy Orange Cranberry Biscotti


When I think about the holidays, cranberries are definitely a flavor that comes to mind. I’m always looking for new Italian cookie recipes, so when I found the orange cranberry biscotti recipe I knew I wanted to give it a try. If you’ve never made biscotti, you need to try! It is seriously one of the easiest types of cookies to make. Plus, its so perfect this time of year to serve with a hot toddy, coffee, tea or hot cocoa. 


This orange cranberry biscotti is so tasty! I love the crisp orange zest with the sweet and slightly tart cranberries. If orange and cranberry aren’t your flavor then you need to try my chocolate peppermint biscotti, which is also so yummy this time of year. Biscotti is also a great cookie to give away as a gift because it holds up so well. You can put it in little tins or even mason jars which makes the perfect thoughtful.

Orange Cranberry Biscotti

Ingredients:

½ cup butter at room temperature 
1 cup white sugar 
2 eggs 
1 tablespoon orange zest (optional) 
1 teaspoon orange extract 
¼ teaspoon almond extract 
2 ¾ cups all-purpose flour 
1 teaspoon baking powder 
½ teaspoon baking soda 
½ teaspoon salt 
1 (6 ounces) package sweetened dried cranberries

Directions:

Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.

Beat butter and sugar together in a bowl until the mixture is creamy. Beat in eggs, orange zest, orange extract, and almond extract.

Whisk flour, baking powder, baking soda, and salt in a separate bowl; mix dry ingredients into moist ingredients to make a stiff dough. Mix sweetened cranberries into dough. Form dough into a ball, cut into halves and shape each half into a log. Place logs onto a prepared baking sheet.

Bake in the preheated oven until the edges are lightly browned, 20 to 25 minutes. Let logs cool completely on wire racks.

Cut logs into slices on a slight diagonal and lay the slices on the parchment-lined baking sheet. Bake biscotti until crisp and lightly golden brown, about 7 minutes.
