How to Make These Awesome Zucchini Chaffles at Home


Have you tried making chaffles before? If you’re following a low-carb or a keto diet, these are probably a mainstay. But even if you’re not on those diets, I think this zucchini chaffles recipe is a great way to replace refined carbs and add extra veggie and protein too.


I love to make this chaffle recipe as a way to make chaffle sandwiches. There are a lot of variations you can make with chaffles. This recipe is bascially a zucchini waffle. I used the same recipe I made my zucchini pizza crust with to make this recipe. If you don’t have a waffle maker, that’s ok. You can actually make zucchini fritters with this recipe too. If you are looking for an affordable waffle maker, I have this mini waffle maker.  I can’t lie, I do wish I had a larger waffle maker so I could do more than one at a time. But, this works just fine and is such a great price.


I personally love to use the zucchini chaffles to make a healthy veggie sandwich, but you can eat them alone or make any type of sandwich you prefer. Sometimes, I also use chaffles as the ‘bread’ for my hamburgers. Honestly, my kids love these too, so it’s a great substitute and way to sneak in veggies. If you’re not a zucchini fan, you should try using cauliflower instead.

Zucchini Chaffles

Stacey shares a simple and delicious zucchini chaffles recipe that is low-carb, keto-friendly, gluten-free and so delicious! It makes a great sandwich too.

Ingredients

  • 2 cups Zucchini shredded and squeezed dry
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 tsp salt
  • 2 cups Mozzarella shredded, part-skim
  • 1 tbsp Italian seasoning

Instructions

  • Grate zucchini. Place zucchini in the microwave for 1-2 minutes so it releases some water. Drain and place zucchini in a paper towel or cheesecloth and squeeze to remove as much water as possible. 
  • Next, mix zucchini, eggs, almond flour, cheese, and seasonings in a bowl. Mix until combined. Add 1/4-1/3 cup of mixture onto your waffle maker and allow to cook until golden brown. Serve warm by themselves, or as sandwiches. 

Notes

Note: Depending on the size of your waffle-maker, you may need more or less mixture. My recipe made 6 waffles.

 

Easy Zucchini Chaffles Recipe

Ingredients:

2 cups shredded zucchini, squeezed dry
2 large eggs, lightly beaten
1/4 cup almond flour
1/4 teaspoon salt
2 cups shredded part-skim mozzarella cheese
preferred seasoning (I like to use Italian seasonings, salt, and pepper).

Directions:

Grate zucchini. Place zucchini in the microwave for 1-2 minutes so it releases some water. Drain and place zucchini in a paper towel or cheesecloth and squeeze to remove as much water as possible.
