How to Make These Easy Thin Mint Brownies with Leftover Cookies

It’s girl scout cookie season! My good friend from Arizona sent me an email asking me to support her daughter’s troop. Of course, I was happy to order (several) boxes to show my support, and because I LOVE girl scout cookies! What’s your favorite flavor? Mine is the thin mint cookies, by far. This year, I decided to try something new with one of the sleeves of cookies. I decided to make easy thin mint brownies. This is a semi-homemade recipe using thin mint cookies. I promise, these are so yummy! You need to try it for yourself.

Easy Thin Mint Brownies


This is seriously such an easy recipe. Since it is sem-homemade, it really is a no-brainer recipe. You can use any box of brownie mix that you prefer. I chose this Ghiradelli brownie mix. I loved this boxed brownie because it had extra chocolate chips so it was very chocolatey and also moist and rich.

If you have trouble finding thin mint cookies from the girl scouts, there are many other cookie options you can try. These cookies are very similar. These cookies are also very similar and you can pick them up at your local Target store. If you have the actual thing, even better! 

Girl Scout Cookie Brownies


When I was searching for a recipe, I actually found several different girl scout cookie brownies! There were some that used the samoa cookies and others that used the tagalong cookies. I never thought about using girl scout cookies in recipes, but clearly this is a thing! If you prefer coconut or peanut butter over the mint, I would say you can definitely swap in your favorite girl scout cookie and I’m pretty confident any of those options would work!

Chocolate Thin Mint Brownies Recipe

Ingredients:

Box of Brownies
1 sleeve of thin mint cookies, reserve 5 cookies for topping
2 Eggs
1/2 cup oil
1/2 cup water (could use milk)

Directions:

Preheat oven to 325 (if your box mix asks for 350, you can use what the box recommends). Spray an 8×8 pan with cooking spray. Mix together the eggs, oil, and water. Add the brownie mix and mix until combined. Chop up the cookies and add to the brownie mix. Pour the batter into the 8×8 pan and top with the remaining chopped-up cookies. Bake for 35 minutes and check for doneness. If a skewer doesn’t come out clean, bake for an additional 5 – 10 minutes, until a skewer comes out clean. Cool before cutting. Enjoy!
