How to Make Easy 3 Ingredient Cake Mix Pumpkin Cookies

Hi, I’m Stacey and I’m a pumpkin spice addict. I can’t help but laugh when I look back at the four years of blogging and realize I’ve made nearly a dozen pumpkin spice recipes. I’ve been a fan of pumpkin bread and all the other assortments of pumpkin since I was a little kid. When I was growing up, my mom used to make pumpkin bread once or twice each fall, and it’s been my favorite ever since. Despite the many recipes I’ve made, I never tried making cake mix pumpkin cookies before, so I figured I could add just one more pumpkin recipe to the mix.

When I first heard about cookies made out of cake mix, I was hesitant. You’re telling me you can make delicious cookies using not much else but a box of cake? Well, it’s true. I created these simple cake mix pumpkin cookies using only a handful of ingredients. The best part – there is minimal measuring, weighing or effort to create delicious (almost) homemade cookies.

Not only is fall the perfect time to try these cake mix pumpkin cookies, it’s also a great time to stock up on all the favorites you’ll need this holiday season. I visited my local Star Market to take advantage of their Stock Up Sale. I can get all of my favorite staples from General Mills, Coca-Cola, Kraft and Nabisco at a great price. I used the Star Market Stock Up Sale as a great time to get extra Betty Crocker™ cake mixes. My son’s birthday is this month, and I have a feeling I’ll be making more cakes as I prepare for holiday entertaining around here. Plus, I now know I can use cake mix to make cookies, so it will be perfect to have some on hand.

3 Ingredient Cake Mix Pumpkin Cookies

Ingredients:

1 cup of canned pumpkin
1 box of Betty Crocker™ Spice Cake Mix
1 cup chocolate chips

Directions:

Preheat oven to 350 F. Line a baking sheet with parchment paper and set aside.

Combine the cake mix and the pumpkin in a large bowl or stand mixer fitted with a paddle attachment and mix on medium speed until well combined, scraping down the sides as needed. Add the chocolate chips and mix with a spoon until incorporated.

Using a medium (1.5 tbsp) scoop, place on parchment paper about 2 inches apart. Note: these cookies didn’t spread very much, so if you want them to be flat, then use the back of the spoon, wet it with water, and smoosh and smooth out the cookies.

Bake for 11-13 minutes, until lightly browned around the edges. Remove from oven and allow to cool on pan for 2 minutes before transferring to a cooling rack.

Place in a sealed container on the counter for up to a week, or store them in the freezer for up to 3 months.
