How to Make this Creamy and Tasty Avocado Pasta Sauce

I’m always searching for ways to sneak healthy ingredients into my kids’ diet. They generally won’t eat much protein and they don’t like avocados on their own. I wanted to try this avocado pasta sauce because it seemed like a really simple recipe and I was hoping I could trick my kids into eating it since they do like spaghetti.

To make this sauce, all you need to do is get a few simple ingredients and break out your food processor. The avocado pasta sauce is vegan, using avocado, basil, olive oil, garlic, salt, pepper and lemon juice. That’s it! Once you add all the ingredients (except the oil) to the food processor, you blend and then slowly add in the oil while the rest is processing. That’s it! No cooking required. You can boil your pasta while you’re whipping up the avocado pasta sauce. The entire meal will take you less than 20 minutes to make!

Not only is it a super quick recipe, it’s also really healthy. This avocado pasta sauce recipe is such a healthy choice because avocados offer the good type of fats our bodies need. Simple and Delicious Avocado Pasta Sauce Recipe

 

Easy, Creamy, and Tasty Avocado Pasta Sauce

This creamy avocado pasta sauce is a great and tasty way to cram a superfood into a quick, delicious, and kid-friendly weeknight dinner!

Ingredients

  • 2 ripe avocados, halved and seed removed
  • 1/2 cup fresh basil
  • 2 garlic cloves
  • salt and pepper, to taste
  • 2 tablespoons lemon juice
  • 1/2 cup olive oil

Instructions

  1. To make the avocado pasta sauce, add the avocados, basil, garlic, salt and pepper, and lemon juice into a food processor.
  2. Process and slowly drizzle in the olive oil until combined and smooth.
  3. In a bowl, combine the cooked pasta with the sauce, tomatoes, and olives. Mix until incorporated and equally covered. Serve immediately.

To make my avocado pasta with tomatoes and olives, you will also need one box of Barilla ProteinPLUS spaghetti, 1 cup cherry tomatoes (halved), and 1 cup of kalamata olives. In a bowl, combine the cooked pasta with the sauce, tomatoes, and olives. Mix until incorporated and equally covered. Serve immediately.
