I’m always searching for ways to sneak healthy ingredients into my kids’ diet. They generally won’t eat much protein and they don’t like avocados on their own. I wanted to try this avocado pasta sauce because it seemed like a really simple recipe and I was hoping I could trick my kids into eating it since they do like spaghetti.

To make this sauce, all you need to do is get a few simple ingredients and break out your food processor. The avocado pasta sauce is vegan, using avocado, basil, olive oil, garlic, salt, pepper and lemon juice. That’s it! Once you add all the ingredients (except the oil) to the food processor, you blend and then slowly add in the oil while the rest is processing. That’s it! No cooking required. You can boil your pasta while you’re whipping up the avocado pasta sauce. The entire meal will take you less than 20 minutes to make!

Not only is it a super quick recipe, it’s also really healthy. This avocado pasta sauce recipe is such a healthy choice because avocados offer the good type of fats our bodies need. Plus, getting them to eat some basil and olive oil isn’t so bad either. Even better, the Barilla ProteinPLUS pasta adds, even more, nutrition to the meal.

As I said before, getting my son to eat protein is nearly impossible. He will eat dinosaur-shaped chicken nuggets, maybe some yogurt, but that’s about it. I swore I’d never let my kids eat those animal shaped foods, but, when it comes to getting him some protein, I’m pretty desperate at this point. That’s why I was so excited that he loves the Barilla ProteinPLUS pasta! It is a good source of lean protein from a simple blend of egg whites, grains, lentils and chickpeas, providing 17 grams of protein per 3.5 oz serving. It’s also a great source of fiber and ALA omega-3. Barilla offers a lot of great options for picky eaters or people with food allergies. Barilla Gluten Free pasta has recently been named one of Parents Magazine’s “Top 25 Allergy Free Foods”. You can find Barilla pasta at your local Walmart store and save with this Ibotta offer. For more recipes ideas, visit Barilla’s Pinterest page.

I’m so glad I tried this recipe. It was really quick and my (picky eater) kids loved it! If you’d like to try this avocado pasta sauce for yourself, check out the recipe below. I’d love to hear what you think!
