I’ve seen a lot of great baked oatmeal recipes online but I never made it myself. I love the idea of baked oatmeal because it’s a perfect hot breakfast you can make it in advance and then eat it all week long. Plus, I love baked goods. This blueberry baked oatmeal is a healthy way to get the taste of a baked good, like a blueberry muffin, without all the sugar and calories.
Healthy Blueberry Baked Oatmeal
Ingredients:
2 cups old-fashioned oats
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1 cup frozen blueberries
1 cup almond milk (you could use any milk)
1 cup yogurt (I used Silk vegan yogurt, but could use any kind)
2 eggs (to keep it vegan, here are some ideas to replace the eggs)
Directions:
Preheat oven to 350F. Spray nonstick spray on an 8×8 baking dish.
Bake for approximately 45 minutes or until golden brown.
You can eat it plain, with extra yogurt, or with milk. I would suggest adding a bit of honey, maple syrup or jam for a little sweetness. This recipe will last a week in the refrigerator. Simply cut a piece and warm it up in the microwave.
