Creamy Chicken Pesto Penne with Sun-Dried Tomatoes & Mushrooms

creamy chicken pesto penneOne of the things most important to my blog is finding practical ideas to elevating everyday life. When it comes to cooking meals for my family, I’m constantly on the look out for quick, easy and nutritious options. That’s why Barilla® Pronto™  works so well for me. Previously, I used Barilla Pasta Pronto to make a Caprese pesto penne, but I wanted to see what else I could create. This time, I made a super yummy creamy chicken pesto penne with mushrooms and sun dried tomatoes.

creamy-chicken-pesto-penne-01The entire dish took me less than 20 minutes to make. The longest part was browning the chicken, which still was so simple. Plus, using the same pot to cook all the ingredients means I was layering flavors as I went. I’m a huge fan of the Barilla Pasta Pronto because it saves so much time, while also saving water and energy. I can create a delicious meal using only one pot and not very much water — significantly less than if you boiled your pasta.

It also cooks so well (I like mine al dente) and it maintains it shape and texture. I chose to use their pesto sauce because it has authentic Italian herbs so the flavor is delicious and it is 100% all natural.

creamy-chicken-pesto-penne-07If you want to try making my creamy chicken pesto penne, it is so simple and took me less than 20 minutes. You only need 6 main ingredients to make this delicious dish. My kids and my husband loved it! I’ll definitely be making this one again. It is perfect for a weeknight meal when I don’t have a ton of time to spend in the kitchen.

Creamy Chicken Pesto Penne with Sun-Dried Tomatoes and Mushrooms

Ingredients:

1 1/2 pounds chicken thighs, sliced into strips
1 box of Barilla Penne Pasta Pronto
1 jar of Barilla Pesto Sauce
6 oz mushrooms
1/2 cup sundried tomatoes, chopped into strips
1 cup milk
olive oil
salt & pepper, to taste
Fresh basil, for topping

Directions:

Cook pasta according to package directions. Once cooked, add some olive oil to prevent sticking and set aside.

To create the sauce, first season and brown the chicken. Remove the chicken and set aside. Add more olive oil to the pan, and cook mushrooms until lightly browned. Add the sundried tomatoes, milk and pesto. Mix the sauce until well combined.

Add the chicken and pasta back into the sauce mixture and mix until combined. Serve the pasta hot topped with some shredded basil.

MLK weekend vibes💙. It has been so warm in LA w MLK weekend vibes💙. It has been so warm in LA we spent all day at the beach yesterday. Today, we are taking in local parks and another gorgeous day. But, my heart is heavy with the state of our world.

Today, as we celebrate an important figure in the fight for Black equality, I’m choosing not to share one of his famous quotes because that’s too easy. Simply sharing his words without considering or sharing my perspective about the current state of our country feels disingenuous at best.

I’ve struggled with how to talk about the insurrection because I still find it all so shocking. And the fact that I am shocked is a problem. That our country can be so divided that it’s difficult for me to even fathom how people could participate in this divisiveness.

The insurrection happened on my birthday, as I flew to Puerto Vallarta. Landing in Mexico and learning about what was happening felt surreal. I still can’t wrap my head around it, honestly.  What scares me the most is the hate. The idolizing of a white supremacist ideology is terrifying. It terrifies me for my children. For their safety. For their lives.

I understand that a lot of hate is spurred by fear, lack of understanding and discomfort. Today, I hope we can all think about how to be more open to thoughts and perspectives that our different than our own. Be more accepting of people who look different, who have different cultures and life experiences. Today, I hope we can all collectively try to confront every human interaction from a place of love and kindness. If we all spent a little more time considering the other person’s life or story, I think we’d have a lot more peace and happiness. #mlk #mlkday #mlkweekend
