Shrimp tend to cook very quickly and when they are overcooked they get really rubbery. Easy Grilled Shrimp with Strawberry Jalapeno Glaze

Ingredients:

1 pound of uncooked shrimp
4 Tbsp. Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread
2 tsp. canola oil
1 shallot, finely diced
1/2 jalapeno
2 Tbsp. rice wine vinegar
1 Tbsp. low sodium soy sauce
2 tsp. Dijon mustard
1/2 lime, juiced

Directions:

In a small saucepan, heat the canola oil. Add the shallots and jalapeno and sweat until softened, about 1-2 minutes.

Add in the Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread, rice wine vinegar, soy sauce, and Dijon mustard. Stir to combine then bring to a simmer for about 1-2 minutes. Take the mixture off the heat and stir in the lime juice.

Once you grill the first side of the shrimp, flip it over and generously brush the glaze over the shrimp. Repeat on both sides. You can also serve a side of the glaze as a dipping sauce.easy grilled shrimp

  • 1 pound of uncooked shrimp

  • 2 tsp. canola oil
  • 1 shallot finely diced
  • 1/2 jalapeno
  • 2 Tbsp. rice wine vinegar
  • 1 Tbsp. low sodium soy sauce
  • 2 tsp. Dijon mustard
  • 1/2 lime juiced
