Cilantro-Lime Grilled Sweet Potato Wedges

About a year ago, my hubby decided to make grilled sweet potato wedges with cilantro and lime dressing as one of our side dishes for a family party. I love grilled vegetables. Actually, I like all grilled food, but especially grilled veggies. His mom and sister were visiting from California so he created a mini family BBQ for them. Although he made a bunch of yummy food, the grilled sweet potatoes are the stand-out dish that his mom is still talking about.The best part about the grilled sweet potatoes with cilantro and lime dressing is that they are super simple to make. All you need is four large sweet potatoes, a couple of limes, some oil, honey, and cilantro.To make the sweet potatoes, simply peel them and cut them into large wedges or slices, depending on your preference. Larger pieces grill easier, so you don’t have to worry about them falling through the rack. Add a small amount of oil to the rack so your potatoes won’t stick. My hubby usually adds a little olive oil to a piece of paper towel and just runs it along the grates.  Grill the sweet potatoes on two sides until they are tender to the touch, with the yummy black grill marks. Remove them from the grill and set aside so you can prepare your dressing.To make the dressing, all you need to do is juice a couple of limes, add some oil, roughly chop up some cilantro and add a bit of honey. Beat to combine. Once the dressing is made, either dump it over the potatoes or add the potatoes to the bowl to disperse the dressing. I prefer to serve the potatoes warm, but they are fine at room temperature too.These grilled sweet potatoes with cilantro and lime dressing are the perfect healthy and delicious summer BBQ side dish. They go so well with burgers, hot dogs, or even a nice juicy steak.

Ingredients

4 large sweet potatoes
2 tablespoons honey
¼ cup lime juice
¼ cup olive oil
2 tablespoons fresh cilantro, finely chopped

Directions

Clean and peel the sweet potatoes. Cut into large wedges or slices. Add a small amount of oil to the grill grates so the potatoes don’t stick. Grill the potatoes on each side until the potatoes are cooked through. Remove from the grill and set aside.

In a large bowl, combine the lime juice, olive oil, honey, and cilantro, beat to combine. Add the potatoes to the bowl and move around until all of the potatoes are covered. Serve warm or at room temperature.
