I wanted to make a special treat for the kids in honor of the holiday weekend. Our good friends from Phoenix, Sean and Amy, were in Newport Beach for Memorial Day weekend. They have two kids, Patrick and Ellen, who are almost 3 and 5. I figured homemade bomb pops, made with fresh fruit, were a great way to kick off summer while also being patriotic — they’re kinda red, white and blue, if you squint a little.
Homemade Bomb Pops with Fresh Fruit
Ingredients:
Strawberry Layer:
2 cups fresh strawberries
1/4 cup sugar
1/8 cup fresh lime juice
1/2 cup water
Lemon Layer:
1/4 cup sugar
1/2 cup fresh lemon juice
1/2 cup water
Blueberry Layer:
12 ounces of fresh blueberries
¼ cup sugar
¼ cup fresh lemon juice
¼ cup water
Special Equipment:
Popsicle Molds
Directions:
For each flavor, blend all the ingredients until very smooth and runny. Check each flavor and add sugar to your personal sweet taste preference.
Pour the strawberry mixture into popsicle molds 1/3 of the way. Freeze for 1-2 hours. Pour the lemon layer 1/3 of the way and insert popsicle sticks. Freeze for another 1-2 hours. Pour the Blueberry layer and freeze until solid, at least 2-4 more hours.
