Homemade Bomb Pops with Fresh Fruit


I wanted to make a special treat for the kids in honor of the holiday weekend. Our good friends from Phoenix, Sean and Amy, were in Newport Beach for Memorial Day weekend. They have two kids, Patrick and Ellen, who are almost 3 and 5. I figured homemade bomb pops, made with fresh fruit, were a great way to kick off summer while also being patriotic — they’re kinda red, white and blue, if you squint a little.

We spent a lot of the weekend chasing the kids around the beach, digging in the sand, and we even spotted a school of dolphins near the shoreline (so cool!). After what seemed like hours running in and out of the waves, we headed back to their condo for their post-beach treat; the kids were excited.

I wasn’t sure if the kids would like them — picky Rocco wouldn’t even try one. But Ellen and Patrick scarfed them down and had blueberry mustaches to show for it.  “Mom, can I have another popsicle?” Ellen asked. It was all I needed to hear to know this recipe is definitely kid-approved.

I combined three different popsicle recipes to come up with this version of homemade bomb pops. These are dairy-free, all natural, and only have 6 ingredients: strawberries, blueberries, lemon, lime, sugar and water. They are super easy to make, yummy and just the right blend of sweet and tart.

Homemade Bomb Pops with Fresh Fruit

Ingredients:

Strawberry Layer:
2 cups fresh strawberries
1/4 cup sugar
1/8 cup fresh lime juice
1/2 cup water

Lemon Layer:
1/4 cup sugar
1/2 cup fresh lemon juice
1/2 cup water

Blueberry Layer:
12 ounces of fresh blueberries
¼ cup sugar
¼ cup fresh lemon juice
¼ cup water

Special Equipment:
Popsicle Molds

Directions:

For each flavor, blend all the ingredients until very smooth and runny. Check each flavor and add sugar to your personal sweet taste preference.

Pour the strawberry mixture into popsicle molds 1/3 of the way. Freeze for 1-2 hours. Pour the lemon layer 1/3 of the way and insert popsicle sticks. Freeze for another 1-2 hours. Pour the Blueberry layer and freeze until solid, at least 2-4 more hours.
