Baked Brie With Fig Jam


  • 8 oz Brie cheese rind on
  • ½ cup fig jam or other fruit spread
  • 2 sheets of puff pastry thawed
  • 1 egg
  • 1 tablespoon water
  • Ritz Crackers
  • Fresh Rosemary optional


  • Preheat oven to 400 degrees. Lightly flour the work surface and unroll one sheet of puff pastry.
  • Gently roll out the pastry to diminish the creases.
  • Place ½ cup of fig jam in the center of the puff pastry and top with the brie round (rind on).
  • Fold puff pastry over the brie in a circular motion.
  • Once all puff pastry is covering the brie, create an egg wash by beating one egg with the one tablespoon of water.
  • Brush the egg wash all over the puff pastry to help seal it.
  • Turn the puff pastry over and brush the top of the pastry.
  • To create the mini football, roll out the second sheet of puff pastry.
  • Using a knife, cut out a football shape, approximately 3 inches long by two inches wide.
  • You can decorate the football by adding little pieces of puff pastry to the sides to create the white bands and then use the knife to create the laces.
  • Attach the football to the center of the top of the puff pastry and egg wash the football.
  • Bake for 20 -25 minutes, until golden brown.
