But you don't have to! These gluten free oatmeal pancakes are totally healthy and a super filling way to start your morning. You can start your year refreshed with healthy recipes like these pancakes without sacrificing on flavor. A lot people assume pancakes can't be healthy, but I've created this ultra healthy version that is also stick-to-your-ribs good. It is a great way to start your morning with whole grains, fresh fruit, and protein. The best part about this recipe is how versatile it is. If you don't like berries, you could top the oatmeal pancakes with syrup, honey, peanut butter, or a dash of powdered sugar. Also, I made these gluten free, but if you don't have gluten free flour, you could easily swap in whole wheat or all-purpose flour. When deciding on a pancake recipe, I chose to add orange juice and orange zest for an orange-flavored gluten free oatmeal pancake. If citrus isn't your thing, you could add vanilla and cinnamon, or other spices for a totally different take on this recipe. Gluten Free Oatmeal Pancakes Ingredients: 1 cup milk 1 cup rolled oats 1/2 cup gluten free flour 2 tablespoons vegetable oil (could substitute apple sauce) 1 egg 1 tablespoon Minute Maid Light Orange 1/4 teaspoon salt 1 1/4 teaspoons baking powder Zest from one orange Directions: Pour milk over oats and let stand 2-5 minutes. Next, beat in eggs, oil, then add the remaining ingredients. Be aware, the mixture will be thin. Spray cooking spray on a hot griddle and pour batter onto the griddle. Serve warm with berry compote Easy Berry Compote Ingredients: 1 cup each of strawberries, raspberries, blueberries 3 tablespoons Minute Maid Light Orange Directions: Place fruit and juice in a small saucepan and bring to medium heat. Once bubbling, reduce heat slightly and use a wooden spoon to muddle and mash the fruit. Continue cooking over medium-low heat for 10-12 minutes, occasionally mashing fruit to combine. Remove from heat and transfer to a clean jar or container to cool thoroughly. Store in the fridge and reheat to serve with muffins, ice cream, scones, and more.
