Delicious Lemon Biscotti Recipe: How to Make this Tasty Treat


The other week, I did order pick-up and ended up with a bag of lemons rather than the bag of apples I had tried to order. Good news for me, I actually love lemon. So, this mistake gave me the chance to create a lemony dessert I haven’t made before. Making biscotti is super easy, so I did some research and found an awesome pistachio and lemon biscotti recipe I adapted to share with you. I’ll delve into the origins of biscotti, explore the allure of lemon biscotti, and share some other easy biscotti recipes.

Biscotti Ingredients:

  • 2 ⅓  cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons freshly grated lemon zest
  • 3 tablespoons lemon juice
  • 1/2 cup pistachios


Lemon Glaze Ingredients:

  • ½ cups powdered sugar
  • 3-4 tablespoons lemon juice

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Stir in the melted butter, lemon zest, eggs and lemon juice.
  4. Next, add the pistachios and mix until combined.
  5. Divide the dough in half and shape each portion into a log about 12 inches long and 2 inches wide.
  6. Place the logs on the prepared baking sheet, spacing them several inches apart.
  7. Bake for 25-30 minutes, or until the logs are firm and lightly golden.
  8. Remove the logs from the oven and let them cool for 10 minutes. Reduce the oven temperature to 300.
  9. Using a sharp knife, slice the logs diagonally into 1/2-inch thick slices.
  10. Arrange the slices cut-side down on the baking sheet and bake for an additional 10-15 minutes, or until golden and crisp.
  11. Let the lemon biscotti cool completely before adding th glaze.
  12. To make the glaze, whisk together the powdered sugar and lemon juice. The glaze should be runny, but still fairly thick. You can add more lemon zest to the glaze for a stronger lemon flavor. 
  13. Let dry before serving.
