How to Make Impressive Mini Apple Pies with Puff Pastry


It’s nearly fall, which always makes me think of desserts using apples and pumpkin. I’ve made several pumpkin recipes and apple recipes during my eight years of blogging. But, I’ve never made mini apple pies with puff pastry before. If you haven’t used puff pastry before, it is one of the best short-cuts for all types of desserts. It functions much like a pie crust without all the time and effort. Although I do love making this simple pie crust, you can save the mixing and resting time by opting for puff pastry.


These apple pies with puff pastry are really simple to make. Once your puff pastry is thawed, the entire process will take you only about 15-20 minutes to prep and another 20-30 to bake. You can use any type of apple you prefer. I usually use granny smith apples with apple pie recipes, but this time I used Honeycrisp apples. The only thing I would change about this recipe is to fill the mini apple pies a bit fuller with apples. I didn’t want to overstuff the pockets, but I actually think I needed more filling in them. Despite not adding enough filling, they are really delicious and SO simple to make. Plus, my kids loved them. Mini Apple Pies with Puff Pastry

Ingredients:

1 package puff pastry
2-3 peeled and chopped apples (I used Honeycrisp but granny smith are also great)
2 cup packed brown sugar
1 teaspoons flour
1 teaspoon lemon juice
1⁄2 teaspoon nutmeg
1 teaspoon cinnamon
1 beaten egg + Tablespoon water

Directions:

Thaw puff pastry according to directions on the package. Peel, core, and chop apples. Combine the apples with sugar, flour, lemon juice, cinnamon, and nutmeg.

Preheat oven to 350°F. Flour the surface lightly and cut the pastry sheet into nine 3×3 squares. Place approximately 1/4 cup apple mixture on each square and brush edge with beaten egg. Place a second pastry square on the top of the already filled pastry to form a pocket. Press down the border with a fork to seal and decorate the edges.

Make some incisions on the top of each pie to allow for ventilation.  Place the mini apple pies with puff pastry on an ungreased cookie sheet. Egg wash the top of each mini apple pie. Bake for approximately 25 minutes or until golden.
