How to Make These Chocolate Covered Dates That Taste like Snickers Bars

Have you ever had chocolate covered dates before? I actually watched a version of this recipe in a TikTok video so I knew I had to try it. I changed up the recipe a bit by adding different types of chocolate and adding in some honey-roasted peanuts for some extra crunch. Believe it or not, these chocolate covered dates actually taste like a healthy snickers bar. No, not exactly like it. But, the dates mimic the taste of caramel.


If you’re looking for a healthy alternative to a candy bar, these chocolate covered dates definitely do the trick. They may not look the tastiest, but I’m telling you, they are really delicious. Dates are such a great way to add sweetness to your diet without refined sugar. If you want to keep this recipe even healthier, you can use peanut butter and peanuts with no added sugar or ingredients. You can also use healthier chocolate, like Lily’s.

Chocolate Covered Dates Stuffed with Peanut Butter

Ingredients:

12 pitted dates
1/4 cup peanut butter
1/4 cup peanuts (I used honey roasted)
4-6 oz chocolate (I used dark and milk)
Coconut oil (optional)

Directions:

Make sure you pit your dates or buy pitted dates. Slice them down the middle, but not all the way through – only one half way through. Then add 1 tsp peanut butter to each date (until filled). Add 3-4 peanuts to each of the dates and then close the dates around the peanut butter and nuts. Dates vary in size, so just add as much peanut butter and peanuts as you can while still being able to close the date around the filling.

Once the dates are all stuffed, place them in the refrigerator until the peanut butter is chilled. Next, melt the chocolate by adding 1 tsp of coconut oil to your chocolate before melting in the microwave. The addition of coconut oil makes the chocolate much easier to coat and much less thick. I tried without the coconut oil and I found the chocolate consistency just too thick. Add just a little bit of oil at first because if you add too much the chocolate won’t harden. If you think the chocolate is too thick, add a bit more coconut oil. 

Dip and coat the dates in the chocolate and let harden on a parchment-lined baking sheet. I put mine in the refrigerator to harden, but you can also let them harden at room temperature. If you want to make them look a bit prettier, add a bit of your leftover chocolate to a baggie, cut a small hole in the corner, and drizzle the chocolate over the chocolate covered dates in a zig-zag pattern.

I was going to post about summer fashion. I was go I was going to post about summer fashion. I was going to talk about my kids’ beach camp next week. 

But this can’t go unsaid. I am so angry right now. I am terrified for my daughter and women in the U.S.

We just lost a fundamental human right. We just lost control of our bodies. 

This is not about saving the lives of unborn children. Because if it was, then all guns would be banned - because guns are the leading cause of childhood death in the U.S. 

This decision is about control. About controlling women. 

If you have the ability to choose whether to own a gun, why can’t I choose the healthcare decisions that are right for me? This is no longer a democracy. This decision has so much greater impact than people even realize.
