How to Make This Chewy Oatmeal Scotchies Recipe

Did you know January is oatmeal month? I love oatmeal all the ways. I eat it for breakfast several times a week. (Check out my hearty oatmeal pancakes, oatmeal breakfast cookies, or my baked oatmeal, perfect for weekly meal prep! 😉) Oatmeal cookies are one of my favorite types of cookies. I generally make oatmeal chocolate chip cookies, monster cookies, or even oatmeal molasses cookies with apricots, but this time I wanted to try this oatmeal scotchies recipe. Unlike regular oatmeal cookies, oatmeal scotchies use butterscotch chips. I absolutely adore butterscotch chips – they are so sweet but taste amazing with the savory oatmeal. 


The best part about these cookies is that they are so easy to make. The entire recipe takes maybe 10 minutes to put together. I actually made a double batch and used butterscotch chips in half and chocolate chips in the other half of the dough. I’m usually not a huge fan of cookie dough, but this is one of the recipes that the dough is so amazing!

Originally, I made the cookies pretty small, with a one-inch cookie scoop. They didn’t spread very much, so I ended up doing two scoops of dough and preferred the larger cookie (as did my kids). The cookies are so yummy – they are chewy, the perfect blend of sweet and savory, and so delicious.

Chewy Oatmeal Scotchies

Ingredients

  • 3/4 cup butter room temp
  • 1 1/2 cup brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 1/4 cup old fashioned oats
  • 2 cup butterscotch

Instructions

  1. Line your baking sheet with parchment paper and preheat your oven to 350°F.
  2. Use a stand mixer and add butter and brown sugar to the bowl. Set it to medium speed and beat until the mixture is fluffy (about 2 minutes).
  3. Add the egg and vanilla. Beat for another minute.
  4. Add the flour to the bowl and sprinkle the baking powder, baking soda, and salt over the top. Mix until combined.
  5. Mix in the oats and then add the butterscotch chips. Mix until combined.
  6. Use a spoon and your hands to roll out 1.5 - 2 inch dough balls. The mixture will be a little sticky, but not too much that you can roll out balls.
  7. Place the dough balls 2 inches apart on the baking sheet. Bake for 10-14 minutes until the centers set and the edges begin to brown.
